The information presented in this issue of Cajanus focuses on the care of adults infected with HIV and is available in the handbook for the nutritional management of HIV/AIDS in the Caribbean. Some of the articles included discuss the mode of transmission and the effects the virus has on the body, the importance of drug-food interactions and the precautions one should take with regards to minimizing these effects.

The excerpts presented in this issue of Cajanus focus on food preservation - basic techniques, preserving some of our local Caribbean foods, and the consequences of preservation on nutrient content. Anyone with an interest in food preservation will find this issue of Cajanus interesting and enlightening.

The summary of the main findings on the issues surrounding food security and poverty alleviation in the Caribbean discussed at the International Conference hosted by the Caribbean Food and Nutrition Institute is presented in this issue of Cajanus.
